Sipirok is a town in North Sumatra and the capital of South Tapanuli Regency. Reachable by land in 20 hours trip from Medan, this area is long known for its waterfalls, archaeologic sites of megalithic remains and structures, as well as its wildlife: it is the home of the critically endangered Tapanuli orang utan. Mandheling and Ankola are sub ethnics of Batak ethnic group living in the area.

This Mandheling Ankola Sipirok coffee, or simply Sipirok coffee as it is known locally, comes from the highland of South Tapanuli in North Sumatra. Growers of the organic Sipirok coffee do not use chemical fertilizer that could kill the natural nutrients in the soil, but instead use compost as fertilizer. The coffee beans are not spread on the ground for drying but are placed on wood-frame racks with a fine-wired mesh for the rack floor, 30 centimeters above the ground. Beside coffee, locals in the area also produce nira, the juice of the flower stalk of the sugar palms.

Due to the nature of coffee which is susceptible to their surroundings, Sipirok coffee has this distinctive sugar palm flavour.
